1. Slice the fruit
Start with sliced fruit as the foundation for your simmer pot's fragrance. For a lively, refreshing aroma, opt for sliced oranges. You can also add some sliced lemons for a zesty kick. If you want a touch of tartness, include sliced apples. And for a pop of color and sweetness, sliced grapefruit brings a lovely pink tint and scent. Dried fruit works as well if you don't have fresh on hand.

2. Fill the pot with water
Begin by filling your simmer pot about two-thirds full with water, leaving room for all the ingredients without overflowing. As it simmers, check the water level regularly and add more as needed.

Thanksgiving or Christmas Simmer Pot
For a Thanksgiving version, use apple cider as the base and add cinnamon sticks, cloves, and fresh apple slices to fill your home with a comforting fall scent that could even double as a tasty hot drink.
For a Christmas simmer pot, use cranberry juice as the base for a festive, tart sweetness. To bring the forest indoors, combine pine trimmings with cranberries and orange slices.
3. Add aromatic ingredients
This is where the magic happens—it's time to add those vibrant, aromatic ingredients to your simmer pot! For our recipe, we added sliced apples, frozen cranberries, star anise, cinnamon sticks, fresh rosemary, and a few whole cloves to the water.
Here are some other simmer pot ingredients to consider:
- Aromatic herbs like rosemary, mint, or thyme
- Whole bay leaves for an earthy touch
- Loose-leaf chai tea for a spicy hint
- Sprigs of pine or cedar for a woodsy aroma
- A pinch of nutmeg or fresh ginger slices
- A splash of maple syrup or pumpkin spice seasoning
- Vanilla beans or a drop of vanilla extract for sweetness
- Whole cloves or a bit of ground clove spice
- Exotic cardamom pods or star anise
- Fresh peppermint leaves or lavender buds for a floral note
- Chamomile flowers for a calming scent

4. Simmer away!
Place your simmer pot on the kitchen stove over medium-high heat to get those scents bubbling and fill your home with delightful aromas. Or, if you have a wood stove, just put a trivet or rack on top, set your simmer pot there, and let the magic of the simmering scents drift through the air.

Happy simmering!
